Tuna Salad Sandwich

Tuna sandwiches are great for kids and adults alike.

  • 2 slices Rudi's Organic Colorado Cracked Wheat Bread
  • 2 Tablespoons chopped red pepper
  • Two 6-ounce cans white meat tuna packed in water, drained
  • 2 Tablespoons chopped celery
  • 2 Tablespoons chopped red onion
  • 1 Teaspoon chopped flat-leaf parsley
  • 1/3 cup mayonnaise
  • 1 Tablespoon dijon mustard
  • 2 leaves of lettuce
  • Freshly ground black pepper
  • Freshly squeezed lemon juice (optional)

  1. Add tuna to a small mixing bowl and break it up with a fork
  2. Mix with the celery, onion, red pepper, and parsley
  3. Add the mayonnaise, mustard, and sprinkle with pepper. Stir to combine.  Add lemon juice to your preference.
  4. Spread tunafish salad on bread and add lettuce. Top with the other slice of bread
