  • Rudi’s Organic Bakery Spelt Tortillas
  • 6-8 breakfast sausages
  • 1 yellow onion, diced
  • 1lb potatoes, cubed (can use frozen potatoes if desired)
  • 2 cups shredded cheese
  • 12 large eggs
  • 1 cup milk
  • 1 tomato, diced
  • Salt and pepper to taste
  • Cilantro for garnish

  1. Combine breakfast sausage and onion in a large pan and cook according to instructions, or until thoroughly browned
  2. Layer the potatoes and sausage in the bottom of your slow cooker
  3. In a large bowl, combine eggs and milk and whisk well. Pour into the slow cooker and sprinkle with cheese
  4. Stir everything together and set slow cooker for 8-10 hours or overnight
  5. Spoon the mixture into tortillas and garnish with tomatoes, cilantro, and salt and pepper to taste!
