Lobster Rolls

Pick up some fresh lobster from your local fish market to enjoy this lite and refreshing lunch or dinner.

  • 4 Rudi’s Organic White Hot Dog Rolls
  • 2 pounds lobster meat
  • 6 tablespoons mayonnaise
  • 4 tablespoons finely chopped fresh tarragon leaves
  • 4 tablespoons butter
  • 1 lemon, cut in 4 wedges
  • Salt and freshly ground pepper to taste

Chop lobster meat into thick chunks. In a bowl, melt butter and add chopped lobster meat, tarragon, 4 tablespoons of mayonnaise, salt and pepper. Mix together. Place bowl in the fridge for 30 minutes. On a toasted roll, spread remaining mayonnaise on each side and top with chilled lobster mixture. Squeeze lemon over the lobster rolls and enjoy.
