Homemade Taco Salad Bowls

The key to a great taco salad is a crispy, homemade bowl!

Contains: Dairy, Gluten
Recipe Difficulty: Quick & easy
Time Required: 15-25 min.

Ingredients:

 

  • Rudi’s Organic Bakery Spelt Tortillas
  • Shredded lettuce
  • ½ tablespoon olive oil
  • Seasoned black beans
  • ½ cup diced tomatoes
  • ½  cup shredded cheese
  • ¼ cup bell peppers
  • 1 Tablespoon chopped green onions
  • 1 tablespoon black olives
  • ¼ cup refried beans
  • 1 TBSP jalapeños (optional)

Directions:

  1. Spray an oven safe bowl with cooking spray. Place the tortilla in the bowl and put on top of baking sheet and brush the inside lightly with olive oil
  2. Bake for 15-20 minutes at 400 degrees F. until crispy. Allow the tortillas to cool in the bowls for a few minutes, and then for a few more minutes after you take them out
  3. Spread the refried beans on the plate and put the empty taco bowl on top
  4. Layer rest of the ingredients in the bowl and gently toss
  5. Serve with your favorite dressing!
