Easier Eggs Benedict

Our recipe proves that Eggs Benedict can be just as tasty in half the time!

Directions:

  1. Fry Canadian bacon in skillet until fully cooked, about 5 minutes on each side. Keep warm and set aside
  2. In a blender or food processer, combine 3 egg yolks, lemon juice, and cayenne pepper. Blend for 1 minute
  3. Heat butter in a saucepan until boiling. Turn your blender to the lowest setting and slowly add the butter to the mixture. Set aside
  4. In a large saucepan, gently boil four cups of water. Add vinegar and stir
  5. Carefully drop the remaining two eggs in the boiling water and cook three to four minutes
  6. While the eggs are poaching, toast your English muffin in the toaster and lightly spread them with butter
  7. Stack the Canadian bacon and egg on top of the English muffin and drizzle with your Hollandaise sauce
