Baked "Fried" Chicken

Try this lighter version of "fried" chicken for dinner tonight!

Ingredients:

  • 6 slices Rudi’s Organic Country Morning White Bread
  • 5-8 pieces of chicken
  • 1 tablespoon garlic powder
  • 2 teaspoons dried rosemary
  • 3 eggs
  • 1 cup flour
  • Salt and pepper to taste
  • 3 Tablespoons oil

Directions:

  1. Preheat oven to 375 degrees F
  2. Coat a baking dish with the oil
  3. Toast each slice of bread in toaster until crispy and dark brown, allow to cool. Break into smaller pieces and blend in a food processer with ½ tsp salt and ½ tsp pepper until you have finely milled breadcrumbs.
  4. Place flour, garlic powder, rosemary, and salt and pepper in one shallow bowl and mix well. Put the breadcrumbs in another shallow bowl, and the eggs in a third bowl. Lightly beat the eggs
  5. Dredge the chicken one piece at a time first through the flour mixture, then the egg, then the breadcrumbs
  6. Place in the baking dish and bake for 20-25 minutes, then flip and bake for 15-20 more
  7. Remove from oven and allow to cool
