Loaded Veggie Sandwich with Homemade Hummus

This veggie-tastic sandwich is an awesome better-for-you lunch option

Ingredients:

For the Hummus
  • 2 cans garbanzo beans (chickpeas) drained and rinsed
  • Juice of 1 medium sized lemon
  • 2 teaspoons garlic powder or garlic paste
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • salt and pepper to taste

Directions:

  1. In a food processor or blender, combine the garbanzo beans and garlic powder. Pulse 4-5 times until minced
  2. Add the lemon juice, tahini, olive oil, salt and pepper, and 1/2 cup water. Blend until smooth
  3. Spread a layer of hummus on 1/2 the bread. Layer the other ingredients on top in desired order. Top with second slice of bread and enjoy!
