A fresh, gluten-free take on Huevos Rancheros

Ingredients:

  • Rudi’s Gluten-Free Bakery™ Plain Tortillas
  • 2 tbsp. oil
  • 4 large eggs
  • ¼ cup milk
  • 1/2 cup diced tomatoes
  • ½ cup white onion, finely chopped
  • ¼ cup diced jalapenos
  • 1 tablespoon fresh cilantro, chopped
  • Salt and pepper to taste
  • Salsa for serving

Directions:

  1. Heat oil in a large skillet over medium-high. Cook onion, jalapeno, and tomato for 4-6 minutes or until soft and fragrant. Season with salt and pepper to taste
  2. Combine eggs and milk in a bowl, lightly beat and season with salt and pepper
  3. Pour egg mixture into the skillet with the other ingredients and gently stir to break up the eggs
  4. Place tortillas in a damp paper towel and microwave for 15-30 seconds
  5. Spoon egg mixture onto tortillas and sprinkle with cilantro to garnish
