Mini Ciabatta Pizzas

Try this tasty Ciabatta Pizza recipe with Rudi's Gluten-Free Bakery Ciabatta rolls.

Ingredients:

  • 1 bag of Rudi’s Gluten-Free Bakery Ciabatta Rolls
  • 1/2 cup pizza sauce
  • 1/3 cup shredded mozzarella
  • 1/2 cup steamed, chopped broccoli florets
  • 1/2 cup steamed asparagus
  • 1/4 cup steamed red pepper

Directions:

  1. Preheat oven to 400°. Place frozen ciabatta on a foil-lined baking sheet and bake for 8 minutes.
  2. Remove rolls from oven. When rolls are cool enough to handle, remove the tops of the ciabatta rolls with a bread knife; discard tops or  use for another purpose.
  3. Place rolls back onto the baking sheet. Spread 1 tablespoon of sauce over the tops of the rolls, sprinkle with 2 teaspoons each mozzarella, and top with 1 tablespoon of the chopped broccoli. Place rolls back in oven for an additional 2 minutes, or until the cheese has melted. Serve hot.
