Homemade Veggie Burgers

Ingredients:

  • Rudi’s Gluten-Free Bakery Hamburger Buns
  • 1 cup brown rice
  • ½ cup yellow onion, diced
  • 1 cup toasted walnuts
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • ½ tablespoon brown sugar
  • 1 cup garbanzo beans, drained and rinsed
  • ½ cup gluten-free breadcrumbs
  • 1 tablespoon ketchup
  • 2 tablespoons BBQ sauce
  • 1 tablespoon olive oil

Directions:

  1. Heat ½ tablespoon of olive oil in a large skillet over medium heat. Add the onion and sauté for 3-5 minutes, until soft and translucent. Season with salt and pepper
  2. In a large bowl, mash garbanzo beans with a fork or potato masher. Set aside
  3. Blend walnuts, brown sugar, chili powder, cumin, and a bit of salt and pepper in a food processer until they make a fine powder
  4. Combine beans, walnut mixture, onion, gluten-free bread crumbs, ketchup, and BBQ sauce in the same bowl. Mix until you achieve desired texture
  5. To cook, heat the other ½ tablespoon of olive oil in the same skillet. Using your hands or a measuring cup, divide up the mixture and form into patties about 1 inch thick
  6. Cook for about 5 minutes per side, and allow to cool before serving
