Gluten-Free Grilled Cheese and Tomato Soup

This grilled cheese and tomato soup combo is sure to be a family favorite!

Ingredients:
2 slices
Rudi’s Gluten-Free Bakery™ Original bread
½ TBSP butter
2 slices of your favorite cheese
1 TBSP
Spectrum Organic Extra Virgin olive oil
½ an onion, chopped
1 clove garlic, minced
28 oz. can diced tomatoes
2 cups
Imagine Organic Low Sodium Vegetable Broth
½ tsp dried basil leaves
2 tsp. salt
1 ½ teaspoon sugar
Salt and pepper to taste
Directions:
Soup Preparation
Heat olive oil in a large saucepan over medium heat
Sauteé the onions and garlic for 4 to 6 minutes until tender
Add the rest of the ingredients and stir
Bring to a boil, then reduce heat to simmer for 15-20 minutes
Using an immersion or traditional blender, blend soup until smooth
Grilled Cheese Preparation
Melt butter in a skillet over medium heat
Place both slices of cheese on one slice of bread and cover with the other slice of bread
Let the sandwich grill evenly for about 5 minutes on each side
Serve warm with the tomato soup
