Gluten-Free Crispy Baked "Fried" Pickles

These oven baked pickles are so crispy and tasty, you'd never guess they are gluten free!

  • 3-4 slices Rudi’s Gluten-Free Original Bread (for the breadcrumbs)
  • 1 jar pickle slices (you can also buy whole pickles and slice yourself)
  • 2 eggs
  • 1/3 Gluten-Free All Purpose Baking Mix
  • 1 tablespoon Gluten-Free Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • ½ teaspoon cayenne pepper
  • 1 teaspoon black pepper

  1. Start by toasting the bread until crisp, then blend in a food processer for 2 minutes or until you have fine breadcrumbs. They should measure roughly 1-1 ½ cup. Place in a bowl and set aside
  2. Turn broiler on high
  3. Combine eggs and flour in a bowl and whisk together, slowly adding Gluten-Free Worcestershire sauce, and all seasonings. Mix well
  4. Positioning the two bowls side by side, dip pickle slices into the egg mixture, then into the breadcrumbs until coated
  5. Spray a cooling rack with non-stick cooking spray, then place it on top of a baking sheet. Arrange the pickles on the rack
  6. Broil pickles for about 3-4 minutes per side, then serve with your favorite dip!
