Gluten-Free Crispy Baked "Fried" Pickles

These oven baked pickles are so crispy and tasty, you'd never guess they are gluten free!
Quick & easy
Rudi’s Gluten-Free Original Bread
(for the breadcrumbs)
1 jar pickle slices (you can also buy whole pickles and slice yourself)
Gluten-Free All Purpose Baking Mix
1 tablespoon Gluten-Free Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
½ teaspoon cayenne pepper
1 teaspoon black pepper
Start by toasting the bread until crisp, then blend in a food processer for 2 minutes or until you have fine breadcrumbs. They should measure roughly 1-1 ½ cup. Place in a bowl and set aside
Turn broiler on high
Combine eggs and flour in a bowl and whisk together, slowly adding Gluten-Free Worcestershire sauce, and all seasonings. Mix well
Positioning the two bowls side by side, dip pickle slices into the egg mixture, then into the breadcrumbs until coated
Spray a cooling rack with non-stick cooking spray, then place it on top of a baking sheet. Arrange the pickles on the rack
Broil pickles for about 3-4 minutes per side, then serve with your favorite dip!
