Ingredients:
1 loaf
Rudi’s Gluten-Free Bakery™ Cinnamon Raisin Bread
, cut into cubes
1 ¼ cup milk or almond milk
packed brown sugar, separated into ½ cup and ¼ cup
1 teaspoon vanilla extract
4 egg whites
½ teaspoon ground cinnamon

Directions:
Preheat the oven to 325 degrees F and coat muffin tin with oil
Combine egg whites, milk, ½ cup of the brown sugar, vanilla, and cinnamon in a large bowl
Place bread cubes in the bowl with the egg white-milk mixture and gently stir, making sure to coat all the cubes thoroughly
Scoop the bread pudding into the muffin tins until full
Sprinkle ¼ cup of the brown sugar on top and bake for 20-30 minutes
Increase heat to 400 degrees F for 4-6 minutes
Garnish with cinnamon sticks and mint leaves (optional)
