Gluten-Free Cinnamon Raisin Bread Pudding Muffins

Directions:

  1. Preheat the oven to 325 degrees F and coat muffin tin with oil
  2. Combine egg whites, milk, ½ cup of the brown sugar, vanilla, and cinnamon in a large bowl
  3. Place bread cubes in the bowl with the egg white-milk mixture and gently stir, making sure to coat all the cubes thoroughly
  4. Scoop the bread pudding into the muffin tins until full
  5. Sprinkle ¼ cup of the brown sugar on top and bake for 20-30 minutes
  6. Increase heat to 400 degrees F for 4-6 minutes
  7. Garnish with cinnamon sticks and mint leaves (optional)
