Egg Salad Sandwich

Egg salad is a great lunch for kids, or when you're on the go!

Time Required: 15-25 min.

Ingredients:

  • 2 slices of Rudi’s Gluten-Free Multigrain Bread
  • 3 eggs, hard boiled
  • 1/2 red bell pepper, chopped
  • 2 leaves romaine lettuce
  • 1 tbsp. fresh cilantro, chopped
  • 1 tbsp. fresh parsley, chopped
  • 1/4 cup mayonnaise
  • 1 tbsp. fresh lemon juice
  • salt and freshly ground pepper to taste

Directions:

  1. Chop up hard boiled eggs or lightly mash them in a mid-sized bowl. Add mayonnaise and mix gently until eggs are well coated
  2. Mix in bell pepper, lemon juice, cilantro, parsley, salt, and pepper
  3. Place egg mixture on one slice of toasted Rudi’s Gluten-Free bread. Top with fresh lettuce and cover with second slice of bread. Serve immediately
