Gluten-Free Chicken Bacon Ranch Sandwich

Ingredients:

  • Rudi's Gluten-Free Bakery Original Bread
  • 3 chicken breasts, boneless and skinless
  • 1/4 cup ranch dressing
  • 4 slices bacon
  • 3 slices cheddar cheese
  • sliced cucumber
  • sliced tomato
  • 1 cup chopped lettuce
  • salt and pepper to taste

Directions:

  1. Cook bacon in a large skillet over medium-high heat. Wipe out skillet and set bacon aside
  2. Wrap each chicken breast in parchment paper and pound until flattened
  3. In the same skillet you used to cook the bacon, heat 1 teaspoon oil over medium. Cook the chicken breasts for about 5 minutes per side, or until completely opaque. Season with salt and pepper
  4. Lightly toast each slice of bread in the toaster
  5. Layer cooked chicken, bacon, cucumber, lettuce, tomato, and cheese. Top off with ranch dressing
  6. Season with salt and pepper to taste
