Crispy Fish Tacos

These crispy fish tacos are a gluten-free crowd pleaser!

Ingredients:

  • 3-5 flaky white fish fillets (tilapia or mahi mahi works best) 
  • 1 package Rudi's Gluten-Free Plain Tortillas 
  • 1-2 cups cooked white rice
  • 1 cup Gluten-Free All Purpose Baking Mix 
  • 1 cup water
  • 1 1/2 cup oil for frying
  • 1 cup shredded purple and green cabbage
  • 1/4 cup sliced scallions
  • 3 tablespoons sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon hot sauce of choice
  • salt and pepper to taste

Directions:

  1. Heat oil in a deep pan or skillet over medium-high
  2. Warm the tortillas in the microwave for 10-15 seconds, then cover with a damp paper towel
  3. Cut fish fillets into bite size chunks
  4. In a medium bowl, whisk together gluten-free baking mix, water, and a pinch of salt
  5. Dip the fillet pieces into the batter and gently set them in the hot oil. Fry for 2-3 minutes on each side or until golden brown. Set on a paper towel lined plate
  6. In a second bowl, combine the mayonnaise, sour cream, lime juice, garlic powder, hot sauce, and a little salt and pepper to make the sauce
  7. Layer rice, fish, cabbage, and sauce on tortillas and top with scallions and salt and pepper to taste
