G-Free Laura Presents Winter Weekend Recipes With Rudi’s

 

A couple of weeks ago I was snowed into my one-bedroom apartment for three full days. At first it was nice with the whole Netflix binge marathon thing, but after a while I started to go a bit crazy.

One of the things that made my cabin fever worse throughout the entire ordeal was my cabin cravings.

You see, along with the rest of the universe, I decided to kick off 2014 by watching what I ate, including gluten-free carbs. (I just love my daily slice of Rudi’s gluten-free bread!) This was a good idea until all I had was spinach, protein smoothies, and other healthy ingredients that were in no way desirable in sub-zero temperatures.

During my captivity, I thought of all the things I wish I had the ingredients to make, including gluten-free pizza, french toast, and other taste-bud pleasing dishes.

That being said, I felt that this guest-blog was the perfect opportunity to let you all know the different items you can make on a winter weekend, all with Rudi’s products. Be sure to stock your fridge and have the below items on hand in case you find yourself in need of some winter comfort food!

Gluten-Free French Toast | Rudi’s Gluten-Free Bread

If you’re like me, you usually have at least one loaf of Rudi’s gluten-free bread in your freezer, making this recipe a must!

Kick off the next cold, winter weekend you have to spend in your pajamas by enjoying some delicious gluten-free french toast! Most of us have a pretty good idea of how to make french toast, but if you’re in the mood to mix things up, or you need some inspiration, check out the Rudi’s Gluten-Free Breakfast board on Pinterest! There’s no shortage of recipes here and you can choose which type of french toast to enjoy, from your standard cinnamon and vanilla mixture, to a more extravagant choice.

Buffalo Chicken Pizza | Rudi’s Gluten-Free Tortillas

Be sure to have a pack of Rudi’s gluten-free tortillas in your fridge so you can make this Buffalo Chicken Pizza whenever your heart desires. The ingredients are pretty simple – most of which you probably have in your kitchen.

Gluten-Free Pizza | Rudi’s Gluten-Free Pizza Crust

Let’s be honest, any excuse to make gluten-free pizza is a good excuse. If you haven’t tried Rudi’s pizza crust, hurry up and use the Store Locator tool to see which store’s freezer section you should check!

If you’re a smart pizza lover, you probably keep the ingredients in your kitchen at all times, so kudos to you – you’re set for this gluten-free option! Pull the pizza sauce out of the cupboard, the mozzarella from the fridge, and preheat the oven. This would also be a fun time to test out new toppings since you have nothing but time to spare during a winter/snow storm weekend! Maybe sizzle up some bacon for the topping or try that recipe for gluten-free pizza recipe you’ve had your eye on!

Gluten-Free Vegan Veggie Wraps By Guest Blogger Sadiya Wims of VegLight

Need a simple, yet delicious gluten-free and/or vegan lunch idea for the week? Wraps are perfect and I like that you can use one pack for multiple meal ideas. One day, you can enjoy the vegetable wrap below and the next, you can use them to make thin crust pizza or quesadillas.

I recently traveled to Concordia Eco-Resort in St. John, United States Virgin Islands, and my cousin, who is neither gluten-free nor vegan, loved that we were able to use the wraps for two separate meals.

Ingredients to make about four wraps:

  • Rudi’s gluten-free Fiesta Tortillas (which are also deliciously vegan!)
  • 1 ounce Daiya’s cheddar wedge style cheese
  • 1 ounce Daiya’s havarti wedge style cheese
  • 2 tablespoons chopped Jeff’s Naturals kalamata olives
  • 2 tablespoons chopped green onions
  • 1 red bell pepper, roughly chopped
  • 1/3 cup of Daiya or Tofutti creme cheese (I used Tofutti in this recipe.)
  • 1/3 cup of spinach or coleslaw (In this recipe, I used a mixture of shredded coleslaw, kale, Brussels sprouts and chicory. I already had this on hand, purchased from Costco.)
  • 1 tablespoon avocado oil

Preparation:

1. Toss the red peppers in avocado oil. Place them on a baking sheet and broil them in your oven for about four minutes.

2. Process the creme cheese and cheese.

3. Stir in the chopped kalamata olives and green onions.

4. Warm tortillas according to instructions on the package and then spread the cheese mixture on the wrap. Add red peppers, shredded mixture or spinach.

5. Roll and then cut your wrap.

 

Remember, the spread you make is versatile and can even be used as dip or enjoyed on a baked potato.

Gluten-Free Peppermint Cupcake Recipe By Ragan at de’Lure’ Dessert Bakery

When you think of fall you think of pumpkin pies, pumpkin muffins, pumpkin spice lattes, pumpkin everything! When you think of winter the first thing that comes to mind is peppermint. Stores stock their shelves with peppermint candy canes and limited edition peppermint ice cream. Chick-fil-a brings out their famous peppermint chocolate chip milkshakes, and at some point during the holiday season you are bound to bite into a crunchy and delicious piece of peppermint bark. In the spirit of all things peppermint, we came up with our very own peppermint cupcakes!

Last year around this time we were surfing pinterest for something new and creative when we stumbled  upon this fabulous idea: Multicolored swirled frosting. Sounds difficult right? Well, it’s surprisingly easy! We took this idea and created the perfect topping to our mouthwatering cupcakes. We simply made some white frosting and lined a piping bag with 4 stripes of red gel food coloring. From here we added our frosting to the bag and the result was the perfect swirl of red and white!

These cupcakes are simple and easy to make and can be dairy free if using dairy free milk.  Our guests at holiday parties are especially fond of them and we hope you will be to!

Recipe:

Yield: 12 Chocolate Peppermint Cupcakes

Cupcake Ingredients:

  • 1 cup sugar
  • 2 eggs
  • 1 cup gluten free flour blend of your choice
  • 1/2 t. Xanthan gum
  • 3/4 cup unsweetened cocoa powder
  • 1 t. Baking powder
  • 1/2 t. Baking soda
  • 1/4 t. Salt
  • 3/4 water or milk of your choice
  • 6 T. Canola or grape seed oil
  • 1 t. vanilla extract

Frosting Ingredients:

  • 1 cup organic spectrum shortening (room temperature)
  •  2 cups confection sugar
  • 1 t. peppermint extract
  • Red gel food coloring to line piping bag

Cupcake Instructions:

  1. Preheat oven to 350.
  2. Beat sugar and eggs together on medium until light and fluffy.
  3. Gradually alternate dry mix and wet until all ingredients are incorporated being sure to scrape down bowl.
  4. Divide batter evenly into 12 cupcake liners and bake for approximately 18 minutes until toothpick inserted comes out clean.  Cool on a wire rack while preparing frosting.

Frosting Instructions:

  1. Whip frosting ingredients on medium high speed until light and fluffy.
  2. If frosting is stiff, you may add a few drops of any milk of your choice.
  3. Line piping bag with 4 lines of red food coloring ( about halfway up the bag) and then add frosting and top cupcakes

*Tip if you don’t have any decorating bags (you can get disposable ones from craft stores) you can use a gallon size ziplock bag and snip of one of the corners.

De’Lure’ began while recovering from a three year illness that was finally diagnosed as celiac.  I had left my corporate job to take a Summer off but was asked to help at a local café my husband and I frequented.  That part-time position led into baking when the pastry chef moved out of town.  Making these beautiful pastries and desserts was rewarding but could I not eat any of them.  This gave me the idea to begin experimenting at home.  The more I sampled to my family and friends, the more I wanted to make them available to the gluten free community.   I shared this with my friend and manager at the café.  She began sending me patrons who would come in asking for anything gluten free.  My husband encouraged me to pursue going after my own clients.  Eventually, I got the courage to ask our favorite gluten free Italian Restaurant if they would sample some of my creations.  It was not long before they had three of my items on their menu.   De’Lure products can now be found at several local establishments including that café where I began my new career and we have taken on two very talented bakers to help with all the private orders we also receive.  I could not be happier and have never looked back!

G-Free Laura Helps Us Make New Gluten-Free Holiday Memories!

We all know that food is a very social thing in our society which is multiplied by like, a million, during the holiday season. Food is the staple at every holiday party, no matter what is specifically being celebrated. Each family has their own traditional dishes that they serve, and each family member adds their special touch to their signature dish.

Tradition is something very important when it comes to the holidays. At my house, we always have my Uncle’s delicious ham, my Aunt’s cheesy potatoes, and approximately four different types of taco dips (we cut no corners when it comes to anything taco/nacho-related).

Everyone expects a certain spread when it is time to visit the buffet, so what happens when all of a sudden you can’t enjoy this part of the holiday tradition? It can be very emotional, as silly as that may sound to some people. I know that all of us g-free folks understand how something as simple as a taco dip or cheesy potato can bring sadness.

Now that we have established that it is completely legit to want to cry at the holiday buffet, we need to also address the fact that it is important to man up and say, “Screw you, taco dip that contains ingredients I am not sure of! I don’t need you to enjoy the presence of my friends and family!”

The point is, while food is something very important to tradition, it is also not the be all and end all. Remember the true meaning of the holidays – it doesn’t have to do with eating five helpings of everything on the table and washing it down with a Christmas cookie.

Also, another good way to combat the food-induced holiday depression is to take matters into your own hands. If there’s a dish you really want, talk to the family member or friend that normally makes it and see if they can sub items for gluten-free alternatives. Or, do as I do and recreate my favorites with gluten-free options all on my own. For the past three years I have made a special gluten-free version of my grandma’s delicious meatballs so my mom and sister (both gluten free) could enjoy with me!

Making new traditions is always fun as well. If you’ve never been big on making Christmas cookies and you just relied on others, now is your time to shine. You can start a new tradition by making your own batch of gluten-free cookies to share with your loved ones. You might find that it is actually rewarding!

Vegan Gluten-Free and Dairy Free Holiday Recipes by Gluten-Free Vegan Comfort Food!

The holidays can be quite challenging for those of us who don’t eat gluten, dairy, or other foods traditional served on Thanksgiving. I don’t even eat turkey! I don’t offer to host Thanksgiving at my house anymore, instead I volunteer to bring side dishes, salads or desserts when I share the holiday with my family and friends. I love the recipe included here for roasted butternut squash and Brussels Sprouts. It is easy to make, delicious and these vegetables pair well with other common holiday foods. I also like the vegetable slaw, as it is not your traditional cole slaw, but rather, this one has apple, cabbage, carrots and Brussels sprouts. You can add onion too if you like!

I am grateful for so many things, and not overeating during the holidays is tops on my list! The recipes provided here will fit in perfectly with any holiday meal and will leave you feeling good, but not gorged!

Suzi’s Vegetable Slaw

Cole slaw is a great dish to serve during the holidays. It pairs well with many holiday foods and is super easy to prepare.

Slaw

  • 1 cup cabbage, finely chopped
  • 2 cups Napa cabbage, finely chopped
  • 1 cup carrot, grated
  • 2 tbs red onion, grated, optional
  • 1 apple, grated, approximately 1 cup
  • ¾ cup Brussels  sprouts, grated, outer leaves removed and cleaned

 

Dressing

  • 1/3 cup coconut milk (canned)
  • 1 tbs olive oil
  • 1 tbs rice vinegar
  • 1 tbs maple syrup
  • 1-2 tbs lime juice, optional
  • Pinch each of cinnamon, cumin, and chili powder
  • Salt and pepper to taste

Preparation

In a large bowl, toss the vegetables and apple to combine. In a smaller bowl, whisk together the dressing and pour over the slaw. Toss again and serve. Serves 4

 

Roasted Butternut Squash and Brussel Sprouts

  • 4 cups butternut squash, peeled and cut into rounds, then into 8 pieces, like a pie
  • 30 Brussels Sprouts, about 1 ½ #, cleaned and ends cut
  • 2 tbs. olive oil
  • ½ tsp. fresh cracked pepper
  • ¼ tsp. sea salt or Himalayan salt
  • 1 tbs. honey, maple syrup or brown rice syrup
  • ½ tsp. fresh ground nutmeg (or regular)

Preparation

Preheat the oven to 350 degrees and prepare the vegetables.  Drizzle 1 tbs. olive oil on a large rimmed baking sheet and then arrange the vegetables so they cover the pan. In a small bowl, whisk together 1 tbs. olive oil, the honey and seasonings. This mixture will be very thick. That’s ok. Drizzle it over the vegetables and  then roast, turning once with a spatula during the roasting time until done, about 45-50 minutes. Vegetables should be browned and fork tender. Season with additional salt and pepper and serve. Makes enough for 4. Takes about an hour to prepare.

Allergies, Intolerances… and Braces – Preparing for Holiday Feasts and Celebrations!

Thanksgiving, Hanukkah and Christmas!  Holiday festivities, fun and FOOD!  Lots of FOOD!!  For many, dining with family and friends is the highlight of their holiday season.

If you’re one of the many living with food allergies and intolerances, this may NOT be your favorite time of year.  Increased work and family get togethers often multiplies one’s worries associated with accidental food exposures, ER visits and keeping your loved ones safe.  Just when you thought it couldn’t get any more stressful, imagine having to now manage BRACES!

Talk about an added twist to my food allergy world!  As homeroom mom for the past three years, I have it down to a science which foods are SAFE so that every egg, nut and dairy allergic kid can enjoy classroom celebrations.  Yes, we STILL have food in our classrooms.  Now BRACES?  No popcorn? Chocolate?  Gummy Worms?  What? I literally laughed out loud when I was now asked to navigate this food challenge too!

You know what I realized? For those of us navigating a daily journey with dietary restrictions, we are incredibly adept at adjusting.  We are well versed in researching, discovering and finding alternatives for our needs.  We, personally, know how to enjoy the holidays SAFELY and without fear.  The challenge comes when trying to get others to fully understand our needs without feeling as though we are imposing on their world.

Here is my WISH for you this holiday season.  That you can convince those closest to you, that with a little positive spirit and willingness to try out new ideas, we ALL can SAFELY share the holiday festivities!

Don’t let your food allergies, intolerances or BRACES overwhelm you because ‘this year you can’t do what you traditionally do’.

BE YOUR OWN TRADITION MAKER. 

DO YOU NOT WANT TO HAVE FOOD?  Then Don’t!

Have a ‘WISH BOX’ where you, your friends/spouse, and/or children drop in a piece of paper naming an ACTIVITY they would like to do together.  Fill up the box.  From Christmas till New Years Day pull out one WISH every day.  ENJOY BEING TOGETHER.

READ.  Go to the second-hand store and buy some books. Pledge every night to read to each other.  ENJOY BEING TOGETHER.

CREATE.  Make your own gifts and cards.  Have cards from throughout the year?  Pull them out, cut them up, and have FUN being creative, while making homemade cards for friends, family and teachers.  ENJOY BEING TOGETHER.

DO YOU WANT TO HAVE FOOD?  Then Start Planning!

It’s about ENJOYING BEING TOGETHER, with or without food!
