Thanksgiving Leftover Ideas

You worked hard for that tasty Thanksgiving feast, why not enjoy the leftovers?! Below are some simple, delicious ideas to put extra food to good use.

Turkey Soup

Combine 2 cups of stock, leftover turkey and veggies, and spices of your choice (we love to add rich fall flavors like ground mustard, honey, and even fresh apples) in a large pot. Simmer for 15-20 minutes or until turkey is hot.

Turkey Cranberry Sandwich

Just layer your desired amount of these two leftovers between slices of Rudi’s Gluten-Free Bakery Bread. We also suggest adding a slice of Swiss cheese and grilling on each side so it’s warm and melty.

Stuffing Patties

These are a great vegetarian option. Combine leftover stuffing with leftover mashed potatoes and mold into patties. Fry lightly in a pan until slightly browned and crispy. These can be served with gravy, cranberry sauce, or even on a bun as a hamburger patty substitute!

Cranberry Parfait

Spoon some cranberry sauce, yogurt, and granola in layers into a glass for a healthy, holiday flavored breakfast or snack!

Thanksgiving Breakfast Hash

In a skillet, toss together some stuffing, sweet potatoes, bacon, eggs, and anything else you would like to include,  and saute for 8-10 minutes. Top it all off with salsa or hot sauce for an irresistible breakfast!
