Ahhhh… The smell of freshly cut grass, aromatic sweet flowers and rain soaking the pavement. Spring is definitely here! This means that your favorite fruits and veggies are back in season, which is all the more reason for you to get outside, invite your friends and lighten up those winter recipes.
Here are some ideas to get your wheels turning…
You absolutely can’t go wrong with anything made with fruit! Accompany any entree with a fresh fruit salad made up of sweet honeydew melon, mind-blowing mango, perfectly-ripe pineapple and oh-so-yummy strawberries!
What better way to use in-season vegetables than with a grilled vegetable salad?! In addition to your burgers and hot dogs throw some produce onto that grill! Try slicing zucchini into rounds, cut sweet bell peppers into large pieces, trim freshly green asparagus and toss them all with extra virgin olive oil and a hint of salt and pepper. Grill your veggies until soft or tender and if you’re feeling up to it, lightly dust with Parmesan cheese. This side dish is a sure-fire way to get any guests to eat their veggies!
Finish off your spring meal with a light dessert that is sure to leave you smiling. Gather fresh rhubarb and strawberries and make your own ice cream or sorbet!
