Hi Gluten-free followers, one of R devoted facebook fans mentioned that March is autoimmune disease awareness month. We are acutely aware that MANY of R followers suffer from Celiac disease so we thought it would be an appropriate time to talk about it!
Celiac disease as written by the National Foundation for Celiac Awareness is “an autoimmune digestive disease that damages the villi of the small intestine and interferes with absorption of nutrients from food. What does this mean? Essentially the body is attacking itself every time a person with celiac consumes gluten.” The NFCA is a great source for information on Celiac Disease, symptoms and signs, check out the NFCA website at www.celiaccentral.org!
1 in 133 people in the United States is affected with Celiac Disease and as stated by the Celiac Disease Foundation “Celiac Disease is not a food allergy – it is an autoimmune disease. Food allergies, including wheat allergy, are conditions that people can sometimes grow out of. This is not the case with Celiac Disease.” While 1 in 133 Americans are affected with Celiac Disease, 95% of Americans are undiagnosed or misdiagnosed with other conditions!

After I became gluten free, I wondered if I’d have to miss old favorites like grilled cheese and tomato soup on a nice cold day. Thanks to Rudi’s, I found I surely don’t. I also found that using my Rudi’s frozen bread right out of the freezer makes the best grilled cheese I have ever had! It keeps its shape and is so crispy on the outside and yummy soft in the middle.
