I love this wrap recipe for being a light meal with a big taste. The recipe is also extremely simple and can be made in under 20 minutes (if the salmon is already cooked). Typically, I used cook salmon leftovers from dinner the night before for this wrap recipe. I chose Sockeye Salmon for this recipe because Sockeye meat keeps very well and is the leanest compared to meat of other salmon species. This is largely due to the fact that Sockeye is the only vegetarian species of salmon. COSTCO consistently sells fresh wild Sockeye at the lowest price. Rudi’s Gluten-Free Plain Tortilla is the perfect way to make this recipe GMO-Free and Gluten-Free! This recipe can serve as the excellent after-school snack for your kiddos. This recipe is high in protein, Omega-3 and Vitamin D thanks to the salmon. The cucumber also ensures veggies make their way into your little one’s stomach!
Ingredients (Serves 2):
- Rudi’s Gluten-Free Plain Tortilla
- 1/4 lb Cooked Sockeye Salmon
- 1/4 Cup of Chopped Green Onion
- 1/4 Cup of Chopped Cucumber
- 1/4 Cup of Goat Cheese
- 2 Tablespoons of Olive Oil
- Evenly distribute ingredients (aside from olive oil) between two tortillas.
- Roll tortillas and brush with a tablespoon of olive oil each.
- Grill on a skillet or panini press until done!
