1 Rudi’s Gluten-Free Plain Tortilla
½ cup of cooked black beans
¼ cup of salsa
¼ cup of gluten-free mexican cheese
Heat beans on medium heat until hot in a covered pot. Cook the eggs sunny-side up together in a medium-low heated pan (spray with non-stick spray, add eggs once pan is heated). Put heated beans on warm Gluten-Free Plain Tortilla, then slide the cooked eggs on the beans and top with salsa!
I didn’t use any cheese this time around but it would also be yummy with a gluten-free mexican cheese mix!
