Throwing a party can be difficult when you are gluten free because you want your guests to enjoy the food that you prepare but you would also like to eat it out of harms way. Finding that happy medium is much easier than you think and your friends won’t even realize that they aren’t eating gluten! I love making and eating these at parties that I go to because they are refreshing and light but also easy to eat because they are just one bite. These seriously are the best dish that you can bring if you want to impress people without putting much effort into it:)
Mini Caprese Bites- These are extremely easy to make!
Lay out all of your ingredients and give everything a rinse through clean water. Cut the fresh mozzarella into bite size pieces that are comparable to the cherry tomatoes, then take one piece of mozzarella and one cherry tomato, wrap them in a basil leaf and pierce with a tooth pick. Continue to do this until you run out of either tomatos, cheese, or basil. One all of the mini bites are assembled place on a serving dish and drizzle generously with both balsamic vinegar and olive oil. Salt and pepper if you please and enjoy:)
