Lamb is one of my favorite summertime meats and I am always looking for new applications to eat it! I saw some lamb sausages in my local natural grocer’s deli selection and I could not resist to try them out. Growing up, my mouth always watered when my mom told me she was BBQing lamb burgers for dinner. I wanted to use some of Mom’s lamb burger recipe ideas as the foundation for this lamb sausage dish. Of course, a summer meat dish can’t go without a refreshing complimentary salad! My red wine vinaigrette salad consists of mixed greens, raspberries, bell peppers, red onion topped with feta cheese and crushed walnuts. Yum! Best of all? With the Rudi’s Gluten-Free Hot Dog rolls, every single ingredient of this meal is entirely Gluten and GMO-Free!
Ingredients (Serves 4)
- 4 Lamb Sausages
- 1 Green Bell Pepper (Thinly Sliced)
- 1 Yellow Bell Pepper (Thinly Sliced)
- 1 Large Red Onion (Thinly Sliced)
- 2 Cloves of Fresh Garlic (Minced)
- Fresh Rosemary
- Fresh Mint (Chopped)
- 3 Tbsp Basil Pesto
- Fresh Goat Feta Cheese
- Rudi’s Gluten-Free Hot Dog Rolls
- Annie’s Organic and Gluten Free Red Wine Vinaigrette
- Mixed Greens
Sauté 3/4 of each onion and two peppers on med/med-high heat (Save the remaining 1/4 for your salad). Add minced garlic and rosemary to sauté and reduce to skillet medium heat. Stir frequently. BBQ or pan fry (on medium heat) lamb sausages until cooked to your preference.
Toss salad with dressing and add garnishes.
Lightly toast Rudi’s Gluten-Free Hot Dog Rolls. Add cooked lamb sausages and garnish with mint, feta cheese, onion/pepper sauté and a light amount of basil pesto.
