After many gluten free expos that Rudi’s Gluten-Free Bakery has been able to experience this year, it seems that our Gluten-Free Fiesta Tortilla is a customer favorite:) If you haven’t tried our torts yet hurry to the store and grab a pack of this flavorful flour tortilla! These are not only Gluten-Free but they are also Nut-Free and Dairy-Free! At 90 calories a piece they are perfect for a light alternative to corn tortillas. Don’t be scared by the red packaging, these are not spicy at all- they are just packed with flavor, so kids love them too!
You could easily use these for any Hispanic food you are itching to make, tacos, quesadillas, enchilladas, ect. But in light of Halloween I want to give you something out of the box, or should I say ball.
Gluten-Free Cheese Ball–> spookified and rudified:)
3 Rudi’s Gluten-Free Fiesta Flour Tortillas
8 ounces cream cheese-room temperature
1 cup Mexican cheese blend- grated and extremely fine
1/4 cup unsalted butter-room temperature
1 tbsp milk
1/2 tsp cayenne pepper
2 tbsp chives- thinly sliced
1 tbsp jalapeno- finely chopped
3/4 cup black sesame seeds
In a medium bowl, combine and beat cream cheese, Mexican blend, milk and butter until well integrated and fluffy.
Add in chives, jalapenos, and cayenne pepper on low speed. Seal bowl with saran wrap or move contents into a container that can be sealed with a lid and place in the refrigerator overnight.
Pour sesame seeds onto a plate and remove the cheese mixture from fridge. Mold the cheese into a ball then roll onto sesame seeds until fully covered.
Preheat oven to 375
Stack the gfree tortillas and cut into eighths using a knife or a pizza cutter.Scatter onto a non-stick cooking sheet, drizzle with olive oil sparingly, and lightly salt and pepper the chip size pieces. Place in the oven for about 5 minutes, check periodically so the chips don’t burn. Once crispy, remove from oven and let cool.
Place the black Halloween Cheese Ball in the middle of your scariest serving platter and surround with your homemade Gluten-Free Fiesta chips!
