It is nothing new to say that eating a balanced and healthy diet is difficult when you are limited by food allergies. As Amie mentioned, there are several gluten free sandwich breads – *ehem Rudi’s Gluten-Free* that will leave your child smiling every time they open up that brown lunch bag. You can also send fun snacks like single-pouch nut and seed butters with sliced fruit for a dipping fiasco! As you get more familiar with gluten free baking you can create take-along muffins and healthy cookies for your child’s mid-afternoon snack or dessert.
