I love to cook for my family and this past weekend my Grandpa was in town! It was really nice being able to spend time with him because I don’t get to see him very often. The morning that he left, I was making my little sister Maria an omelette when my Grandpa plopped down next to her and asked for one as well. Together they came up with a delicious breakfast with what they could find in our fridge! It turned out to be a hit for both of them:)
3 egg whites
handful of feta cheese
1/4 cup chopped red bell peppers
1 cup spinach
salt and pepper to taste
To make this delicious gluten free breakfast, bring to medium heat a pan with olive oil. Once heated add spinach,chopped peppers,and a touch of salt and pepper, stir until spinach is wilted and bring off heat. Meanwhile have another pan on medium low heat with a slice a butter melting, once butter is melted and the pan heated, add the egg whites.
The whites will begin to cook and once there is a solid base, add spinach, peppers, and feta cheese to half of the egg covered pan. Once all the ingredients are added, fold the eggs in half and let it continue to cook completely before removing.
If this is your first time making an omelette and you are unsure if you have cooked it completely you can stick the pan in the oven at 350 for about 5 minutes, keeping an eye on it, to ensure its cooked all the way through. enjoy
