This is one of our family favorites, and one that helps bridge the gap between the GF and those who can eat gluten in our house. The kids love this for breakfast or as a dessert both and gets lots of fruits in too! Time to prepare: 75 mins
1 loaf Rudi’s (use your favorite type)
1/2 c organic milk
2 c diced apples
1/2 c dried cranberries
1 T vanilla
1 t cinnamon
1 block cream cheese
1 1/2 c sugar
1 c chopped walnuts or pecans
1.Dice whole loaf of bread in 1 inch cubes, set aside.
2. In a bowl cream sugar and cream cheese. Beat in vanilla, milk, and eggs, and cinnamon.
3. Fold in bread cubes.
4. Fold fold in apples and cranberries. (If you want to add nuts, fold them in now)
5. Pour everything into a greased baking dish, and bake at 350 for 45 minutes to 1 hour (or until fork comes out clean.)
