Winter breaks are coming to an end and that means that the new semester is beginning. It’s time to break out the wallets and fork over the cash to pay for the school supplies that continues to get more expensive every year. Textbooks, notebooks, pens, and calculators need to be repurchased for each class multiple times a year and its time we beat the system and prepare ahead of time. This will be the best way for us to save money on the typical school supplies!!
Amazon- this website is remarkable when it comes to finding discount prices for any and everything you could possibly imagine. If you know what you are looking for a couple days before you need it, I highly urge you to go online. You can compare prices on other sites like Target and Staples by using e-commerce, not only will you save prices but you will also save time by getting the supplies delivered straight to your door.
Reusing notebooks can also be a great way to save money! I use binders and notebooks throughout an entire year for different courses. I rarely completely fill a notebook in a class and I make sure that my notebooks are completely used before I throw them out! Another thing I do is cut my notecards in half. I can always fit the information I need on half the card so to save that extra penny I cut my notecards before I write on them!
New classes are going to come every year and you will always need the essentials. You don’t need to be taken by surprise anymore, so get ahead of the game and purchase what you need before you need it!

Throwing a party can be difficult when you are gluten free because you want your guests to enjoy the food that you prepare but you would also like to eat it out of harms way. Finding that happy medium is much easier than you think and your friends won’t even realize that they aren’t eating gluten! I love making and eating these at parties that I go to because they are refreshing and light but also easy to eat because they are just one bite. These seriously are the best dish that you can bring if you want to impress people without putting much effort into it:)
Mini Caprese Bites- These are extremely easy to make!
Lay out all of your ingredients and give everything a rinse through clean water. Cut the fresh mozzarella into bite size pieces that are comparable to the cherry tomatoes, then take one piece of mozzarella and one cherry tomato, wrap them in a basil leaf and pierce with a tooth pick. Continue to do this until you run out of either tomatos, cheese, or basil. One all of the mini bites are assembled place on a serving dish and drizzle generously with both balsamic vinegar and olive oil. Salt and pepper if you please and enjoy:)

Happy National Sleep Day! With the crazy and overwhelming nature of the holiday season, America has officially named January 3rd as National Sleep Day. Unfortunately, most of us aren’t able to fully partake in this much needed holiday, but this does show how important sleep is to us. A good night’s rest is extremely important to living a healthy life.
- “Learning and memory: Sleep helps the brain commit new information to memory through a process called memory consolidation. In studies, people who’d slept after learning a task did better on tests later.
- Metabolism and weight: Chronic sleep deprivation may cause weight gain by affecting the way our bodies process and store carbohydrates, and by altering levels of hormones that affect our appetite.
- Safety: Sleep debt contributes to a greater tendency to fall asleep during the daytime. These lapses may cause falls and mistakes such as medical errors, air traffic mishaps, and road accidents.
- Mood: Sleep loss may result in irritability, impatience, inability to concentrate, and moodiness. Too little sleep can also leave you too tired to do the things you like to do.
- Cardiovascular health: Serious sleep disorders have been linked to hypertension, increased stress hormone levels, and irregular heartbeat.
- Disease: Sleep deprivation alters immune function, including the activity of the body’s killer cells. Keeping up with sleep may also help fight cancer.”
Lack of sleep means much more than a groggy day, if you make a habit of it, your body will wear itself out much quicker. You don’t want to put your life and health at risk! Stay happy and bright the Rudi’s style:) We like to eat, play, and sleep life in the most natural way!

Happy New Year! Last night after trying to decide what to do and what party to attend, Melissa and I settled on the Pizza Party in Littleton. Knowing that I was going to a pizza party I grabbed some of Rudi’s Gluten-Free Pizza Crust! It was a great idea because a couple people that ended up coming were Celiacs and they were so grateful to see gfree crust.
I have only used the Gluten-Free Pizza Crust a couple times but I am always shocked by how easy it is and how delicious it turns out! My friend Chad and his sister Devon made the yummiest pizza of the night and I took down the recipe!
Chad’s Gluten-free New Year’s Pizza
1 Rudi’s Gluten-Free Pizza Crust
3 tbsp gluten free pizza sauce
¼ cup shredded mozzarella cheese
2 tbsp fresh basil
¼ cup chopped pineapple
Cover the pizza crust with the sauce generously and add more if need be! Then sprinkle with the cheese, basil, and top with the pineapple.
Place the pizza in the oven
Enjoy this funky yet delicious gluten free pizza! It is well worth the risk:)
