Organic Beet Burger

Directions:

  1. Heat 1 TBSP of olive oil in a large pan on medium heat
  2. Add the onion and cook for 6-8 minutes, stirring occasionally
  3. Add the garlic, beets, salt, and pepper and cover for about 7 minutes, stirring occasionally
  4. Remove from heat and combine with quinoa and garbanzo beans in a blender or food processer. Blend until smooth
  5. Transfer into a large bowl and add the lemon juice, egg, and cumin. Stir well.
  6. Heat the other TBSP of olive oil in a skillet over medium heat
  7. Scoop ¼ cup of the beat mixture into the pan and shape into a patty
  8. Cook on each side for 3-4 minutes or until light golden brown
  9. Serve the burger on toasted bun with your favorite toppings and condiments
