Chicken and Apple Quesadillas

Quick and easy to make as well as extremely versatile. Change-up the flavor profile of a quesadilla by adding interesting ingredients like apple.

Directions:

  1. Sauté onion in a medium-sized skillet with 2 tablespoons of olive oil on medium heat
  2. Heat a large skillet on medium high heat. Place one tortilla in the skillet
  3. Place shredded cheese on half of the tortilla, at least 1/2-inch from the edge of the tortilla. Add chicken, sautéed onion and sliced apple on top of the cheese. Fold the tortilla and press down with the spatula. Lower the heat to medium
  4. Cook and flip quesadilla until golden brown
  5. Remove from heat, cut quesadilla, add green onion garnish, and cut into triangles. Serve warm
