Baked on the Bright Side

Simple Cranberry Sauce

November 13, 2012

Cranberry sauce is always on our table the day of Thanksgiving but it really isn’t utilized until the day after when we make sandwiches for skiing. Getting on the mountain the day after Thanksgiving is always the best because you never get better packed food. My dad throws everything in between two pieces of bread; stuffing, mashed potatoes, turkey, cranberry sauce, and gravy. Best sandwich hands down. To make the perfect organic tart cranberry sauce you need to keep it simple. The fewer the ingredients the better- these natural flavors are best when they aren’t hidden behind spices.

12 oz organic cranberries

1/2 cup organic honey

2 tbsp organic brown sugar

1 cup fresh organic orange juice

In a medium pot, melt honey and brown sugar. Once combined, add in orange juice and cranberries. Cook on medium until cranberries begin to burst and sauce thickens, which will be about 10 minutes. Stir everything together and pour into a serving pan, place in the refrigerator for a couple hours- you should actually make this the day before to get the best consistency. enjoy:)
