Alright, everyone!

Step away from the spaghetti sauce and don’t touch that taco shell! It’s time to make an all American dinner using a recipe I made just the other night! I’m originally from Texas and that means one thing. I like barbeque sauce. Make that LOVE. It tastes good on almost anything! Two nights ago, I made barbeque chicken sandwiches using Rudi’s Organic Wheat Hamburger Buns and homemade potato and zucchini fries. My super sweet roommates who are less than sneaky, will tell you they’re delicious too (as if I wouldn’t notice an entire tray for fries missing!) I love making these sandwiches because they sell chicken in packages of two at my local natural grocery store so I can make one sandwich for dinner and one for lunch!

Barbeque Chicken Sandwiches and Homemade Zucchini and Potato Fries

For the sandwiches:

1 galloon sized zip up baggie

2 Pieces of all natural boneless uncooked chicken

¼ cup Barbeque sauce (marinade to your liking)

1-2 TBSP olive oil

2 Rudi’s Organic Wheat Hamburger buns

For the Fries:

6 Potatoes (mix of purple, red/new potatoes and small yellow potatoes)

2 small zucchini

4 TBSP olive oil

Salt and pepper to taste

1 Cup Homemade Rudi’s Bread crumbs (recipe shown)

-4 slices of toasted Rudi’s Organic Country Morning White bread

1 ½ TSP Chili powder

1 ½ TSP Garlic Powder

Directions:

Pour barbeque sauce into zip up baggie and place the chicken pieces inside as well. Seal bag then shake until the chicken is well coated in the barbeque sauce. Put aside. Wash potatoes really well (we’re going to leave the skin on because of all of the nutrients they hold!). Cut up your potatoes into sticks that look like French fries and place into a large bowl. Now slice zucchini horizontally to make rounds. Place the cut zucchini in the same bowl as the potatoes. In a food processor, place your toasted Country Morning White bread and process until it has a crumb-y texture. Now go back to your bowl of potatoes and zucchini. Place your olive oil, salt and pepper, chili powder and your garlic powder over the vegetables and mix until coated. Then add your homemade breadcrumbs and mix until evenly coated. Pour the seasoned fries onto a baking sheet lined with parchment paper and spread out to create one layer. Place in your preheated oven at 400 degrees and bake for about 25-30 minutes or until crispy.

While your French fries are baking, lets go back to the chicken. In a medium sized pan, warm your olive oil. Once it’s slightly warm, place the marinated chicken on the pan and cook on each side for about 10-12 minutes on medium heat or until fully cooked. Remove from heat then place chicken sandwich onto a hamburger bun, take your fries out of the oven and serve!
