Have you ever had a picnic in the park on a gorgeous sunny day? How about taking that dreamy feeling of pure happiness and enjoying it first thing in the morning for a lazy weekend breakfast? Sounds pretty nice, doesn’t it?

Well, as the weather here in Boulder, Colorado has been truly amazing these past few days it seems that this weekend is ideal for a dreamy weekend breakfast enjoyed outside on the patio.

A recipe for such an occasion would have to meet a few requirements, but I think this one fits the bill.

Organic? Check.

Healthy ingredients? You bet.

Within the budget? Definitely!

I stumbled upon these to-die-for Coconut Waffles with Bananas and Mango Jam from Amanda at Easy Peasy Organic.

The best part about these waffles are that yes, they are organic, but they also come at such a low cost… about $0.90 per waffle to be exact.

So grab all of the needed ingredients and be sure to enjoy yourself this weekend with this sweet little treat.

Ingredients
2 large organic eggs
4 Tbs coconut oil
1 c coconut cream
1 c water
1 heaping Tbs raw honey – warmed to make it lovely and runny
1 c finely shredded yellow squash or zucchini
1 c plain unbleached flour
1 c buckwheat flour
2 tsp baking powder

To serve
mango jam (or some other suitably tropical-fruity jam)
2-3 sliced bananas
cream

*As always, try to use organic ingredients when you can – especially the eggs.

The process
1. Preheat the waffle iron. Mix the eggs and oil together in a large bowl, then add the rest of the liquid ingredients and the shredded squash and mix well.

2. Add the dry ingredients and mix until fully combined. Make your waffles! Top with mango jam and bananas and cream.
