Why did Rudi’s Organic Bakery decide to launch Rudi’s Gluten-Free Bakery?

At the heart of it all, we believe that living a healthy life leads to happiness. For years, people have been asking us to bake gluten-free bread that’s as delicious as our organic breads. Rudi’s Gluten-Free Bakery is a natural extension of our commitment to baking on the bright side, creating healthy and wholesome breads the whole family can enjoy.

What experience does Rudi’s Organic have for launching a gluten-free line?

Our passion is baking better bread and we’ve been doing it since 1976. We used our extensive baking experience to create gluten-free bread that tastes and feels like the real thing. Plus, Rudi’s worked extensively with gluten-free experts to make sure we’re making products that are safe and do not contain gluten. All of our breads are certified gluten-free and carry the recognizable Gluten Free Certification Organization (GFCO) GF Symbol.

What partnerships do you have in the celiac community?

Enthusiastically giving back to our communities has long been an important part of our business. We’re partnering with various organizations like the National Foundation for Celiac Awareness (NFCA), the Gluten Intolerance Group of North America (GIG), Celiac Disease Foundation, and Celiac Sprue Association to elevate the level of education and awareness on celiac disease and gluten-intolerance through local and national initiatives that drive toward a hope for a better, brighter future.

What is celiac disease?

Celiac is an autoimmune disease that damages the small intestines and interferes with the absorption of nutrients from food. It is triggered by consumption of the protein called gluten, which is found in wheat, rye and barley. One in 133 Americans has celiac disease, not to mention the countless others who are suffering from less severe forms of gluten intolerances and sensitivities.

How did you develop the products?

Our master bakers worked extensively with gluten-free experts and consumers to develop breads that have the same taste, look and feel of regular bread – you don’t have to give anything up to go gluten-free.

How did you make gluten-free bread that tastes so much like real bread? What’s your secret?

Although we’re not able to share our proprietary recipes, what we can tell you is that our master bakers worked with gluten-free experts for more than 15 months to get our formulas to taste like real bread. Our passion is baking better bread and we’ve been doing it since 1976. We used our extensive baking experience to create gluten-free bread that tastes and feels like the real thing.

Are your new gluten-free products organic?

Although our gluten-free products are not certified organic, they do contain entirely natural ingredients. Plus, they are all-natural – you won’t find any artificial chemicals or preservatives in our breads. While we do believe we developed the best-tasting gluten-free bread on the market, it was also important to us that we keep the breads affordable so the whole family can truly enjoy bread again.

Are your new gluten-free products non-GMO?

Yes, consistent with our long tradition of baking better breads on the bright side, all of the ingredients in our gluten-free breads are non-GMO.

Are your gluten-free products kosher certified?

Our gluten-free breads, hamburger buns, hot dog rolls and pizza crusts are certified kosher by the Orthodox Union (OU).  Our Gluten-Free Tortillas are not certified kosher.

What is xanthan gum?

Xanthan gum is a food additive that is produced by fermentation of glucose or sucrose. It’s commonly used in gluten-free baking products and helps give the dough a “stickiness” that would otherwise be achieved with gluten.

What is potato extract?

Potato extract is unrefined potato starch. It contains more of the natural minerals and non-starch plant components than purified starch. The comparison is similar to whole wheat flour vs refined white flour.

What is inulin? Where does it come from?

Inulin is a form of soluble fiber that is derived from plants. The inulin in our gluten-free breads comes from organic agave plants.

Are your products vegan?

No, our gluten-free breads contain egg white and organic honey.

What is the shelf life of your gluten-free breads?

Rudi’s Gluten-Free Bakery breads can stay fresh in your freezer for up to six months. Plus, our bread can also be left out on the shelf for up to four days before they begin to dry out. If your bread does dry out, put it in the toaster to create that soft texture again.

Is your product allergen free?

Rudi’s Gluten-Free Bakery breads contain eggs so they are not allergen free. Our products do not contain dairy, soy, or tree nuts*.

*Tree nuts do exist in our baking facility, but our gluten-free breads are baked on a separate dedicated line with no tree nuts.  Our gluten-free breads are baked only after our facility has gone through an extensive, full day clean-up and sanitization  process.

Do I need to toast / refresh your gluten-free breads?

Our passion is baking better bread and we’ve been doing it since 1976. We used our extensive baking experience to create gluten-free bread that tastes and feels like the real thing without you having to toast it to eat it.

Does your bread need to be stored in the freezer?

We recommend freezing our gluten-free breads to lock in their moisture and freshness. However, our bread can also be left out on the shelf for up to four days before they begin to dry out.

Safety & Certification:

Is your facility dedicated gluten-free?

All Rudi’s Gluten-Free breads are certified gluten-free and carry the recognizable Gluten Free Certification Organization (GFCO) GF symbol. While our facility is not dedicated gluten-free, we bake our gluten-free breads on separate, dedicated equipment and on separate production days – you can feel assured our gluten-free products never come into contact with something used to make a product containing gluten. Plus, every batch of our gluten-free bread is tested and must test below <10 ppm of gluten for distribution.

Who is the Gluten Free Certification Organization?

Gluten Free Certification Organization (GFCO) provides an independent service to supervise gluten-free food production according to a consistent, defined, science-based standard that is confirmed by field inspections, in order to achieve heightened consumer confidence and safety.

What is your GF Testing process?

As part of our gluten-free certification, every batch of our gluten-free bread is tested and must test below <10 ppm of gluten for distribution. In addition, all incoming ingredients are tested and certified to be gluten-free. We also send product to an outside lab to validate our internal test results and ensure we have less than 10 ppm of gluten.
